Foodie Pen Pals

I have been doing Foodie Pen Pals for several months now and have been having so much fun with it. I love connecting with other foodies around the country, getting to know them and exchanging boxes filled with goodies! I have been slacking on one important part of the whole deal, though, and that is sharing what I’ve received. Here are my two most recent foodie boxes. Carma, a blog reader not a blogger, sent me handmade jelly, her own homemade dark chocolate peanut butter, a PMS bar, and cocoa spice tea. Chocolate tea? Yes, please! I am sipping a mug of this delight as I write this post. White Zin and Lavender jelly and Pinot Noir Smoked Cherry jelly have made a few breakfast and late-night snack appearances since receiving these cute little jars, and that dark chocolate peanut butter was gone almost as soon as it was opened. Thanks, Carma!

Janie (another reader) went above and beyond when putting together a box for me. Dark Chocolate Dreams (more dark chocolate peanut butter. Are we sensing a theme here?), cheese bread mix, crepe mix, Chicago steak seasoning, Jamaican jerk seasoning, coconut milk and basmati rice. There were also some chocolates in the box called Sonho de Valso. They are Janie’s favorite Brazilian chocolates and they must be mine, too, because they were devoured before I was even within arm’s reach of a camera! The rice and coconut milk were meant to be served together with beans, and that is exactly what I did. Here is Janie’s delish rice dish:

Coconut Rice and Red Beans

Ingredients

1 cup rice
1 can coconut milk
1 can red kidney beans, drained
1 tablespoon fresh thyme, chopped
1/2 teaspoon salt

Directions

1. Combine all ingredients and cook according to time frame on rice bag.

Basically the easiest recipe ever.

    Well, you know I don’t like Chocolate, so this doesn’t sound very interesting, BUT, getting random boxes of food sounds pretty cool! so you can be my foodie penpal. Please send BBQ ribs and mashed potatoes in my box. Thanks.

    Am I doing this right?

      Hahaha. You really want me to put ribs and mashed potatoes in a box and mail it to you? ;) I guess I could just leave it on your doorstep in a pretty not-boxed package.
